Tomato, Cucumber + Avocado Salad

I have been focusing on clean eating for the past month and have been learning new healthy recipes.  This salad has quickly become one of my favorites!  It is super easy to make, uses raw food and gives just enough protein to fill me up.

I have had it several days in a row this past week while I have been detoxing because I love it so much.

Recipe:

  • cut up one cucumber
  • slice one avocado
  • cut in half about 1 cup of cherry tomatoes
  • mix together
  • drizzle with freshly squeezed lemon juice
  • sprinkle with sea salt

This detox helps my body let go of the junk it wants to hold on to.  This is NOT about starving yourself.  You will get enough calories and nutrition and food to properly fuel your body and reset it from the junk.

 Down 5lbs and 1″ off my waist. The detox was hard but I stuck to it!! Having this group kept me accountable and on track! I am still shocked that I was able to stay away from sugar, mostly pepsi!! for 5 days. I plan to stick with eating lots of veggies and drinking lots of water. I didn’t have the headaches or cravings some people experienced. I didn’t always feel great physically, but emotionally it was the best week I’ve had in a long time. Biggest accomplishment is that I did it – I started it and I finished. Bonus is that I lost 7 pounds and feel like I have a bunch of new friends too.  Thanks to this week I am now down 36 pounds in the last two months. I have a long way to go to reach my goal, but for the first time feel confident I can do it without any medical intervention. This week was definitely a change in attitude towards food all around! I wasn’t cravings sugar in the least but really wanted cooked food! I also rekindled a love for veggies I had lost somewhere in the past few years! I actually woke up wanting my lemon water and some cucumbers! I plan on continuing with the 180 turnaround plan because I had such great success with the detox! I lost a total 9 lbs and 7 inches around my body! This was a great week. I was never starving or felt deprived. If I got hungry I ate some veggies. I have no sugar cravings, I lost 4.2 lbs, and have lots of energy.
