Smashed Avocado and Tomato Toast is Easy, Yummy and Healthy

This has become my most favorite healthy snack option and is SO easy to make.

smashed avocado and tomato toast

Avocados are a simple healthy swap to use instead of butter on your toast because they are rich in vitamin A, C, E, K, fiber, iron and healthy monounsaturated fats.

Plus it’s yummy!

Here is what you do to make this awesome goodness:

Smashed Avocado and Tomato Toast

  • toast 2 pieces of whole wheat bread
  • top with 1/2 an avocado, smashed
  • place sliced tomato on top of that
  • sprinkle with salt
  • eat and enjoy!

Yesterday I tried it with smashed avocado and a fried egg on top for lunch. Delicious!

Go try it today.

Here they are fresh out of the oven.  The boys didn’t even wait until they were cooled off to dig in. So yummy warm!

I also cut some into bars to freeze.  I put them into small bags to use in lunches.  This is all I was able to save from this batch.  I usually make 2 for my family.

Homemade Applesauce

Fall brings homegrown and farm fresh apples.

One of our favorite and EASY ways to use the apples is to make applesauce.

Step 1:

Put on a cute apron.  I got this one from my sister, Rachelle at Livin the Fit Life.  Handmade by my cousin Sarah.  Isn’t it too cute?

Step 2:

Gather the apples

Step 3:

Peel and Chop.  Place in a big pot and put in enough water to just cover.

Boil on medium until desired softness.
